Kikusui Brewery was established in 1881 and is located in Niigata. Surrounded by oceans and mountains, Niigata is a land that prides itself on its natural beauty and delicious food. The prefecture has more sake breweries than any other prefecture, and these many breweries continue to make great efforts to produce quality Japanese sake.

The name "Kikusui" is a combination of two words "Kiku" (菊) meaning chrysanthemum, and "Sui" (水) meaning water. The name originated in a Noh play, a traditional Japanese art form.
